Unlike many modern desserts that rely on fancy ingredients, Paal Payasam proves that simplicity can create unforgettable flavours. The dish is prepared by slowly simmering rice with milk and sugar until the mixture thickens into a smooth, creamy consistency. The longer it cooks, the deeper its flavour becomes, giving it the signature ivory colour and rich texture.
The dessert holds a special place in South Indian celebrations, including festivals, family gatherings, and special occasions. Its gentle sweetness and comforting aroma make it a favourite across generations. The secret behind a delicious bowl of Paal Payasam is not rushing the process. The milk needs time to reduce naturally and blend with the rice, creating the perfect balance of sweetness and creaminess.
Easy Paal Payasam recipe at home
Ingredients:- 1 litre full-fat milk
- 3 tablespoons rice
- 4 to 5 tablespoons sugar, or according to taste
- A few cardamom pods or cardamom powder for flavour
- Cashews and raisins for garnish
Method:
- Start by rinsing the rice and soaking it for around 15 to 20 minutes. Drain and keep it aside.- Take a heavy-bottomed pan and heat the milk on a low flame. Once it starts simmering, add the rice and continue cooking slowly. Stir occasionally to prevent the milk from sticking to the bottom.
- Allow the mixture to cook until the rice becomes soft and the milk reduces to a thicker, creamier texture. This slow process is what gives Paal Payasam its traditional taste.
- Finish with roasted cashews and raisins before serving warm.
