Caramelised onion spaghetti: Ingredients required
50g lentil spaghetti120g of low fat/toned milk and paneer
1½ thinly sliced medium onions
Sliced mushrooms
Minced garlic
1 tsp olive oil
Chilli oil to taste
1 tbsp grated cheese
Zero-calorie sweetener to taste
Salt to taste
Black pepper to taste
For toppings, Vanshika Khurana recommended adding basil leaves.
Caramelised onion spaghetti: How to make
To prepare the caramelised onion spaghetti, first boil the spaghetti as per the package instructions. Once cooked, the pasta water should be reserved before draining the spaghetti and setting it aside. Next, olive oil should be heated in a pan over medium heat, followed by the sliced onions. The onions should be cooked until they turn lightly browned. A splash of water should then be added, and the onions should be cooked further. This process should be repeated 2–3 times until the onions become deeply caramelised.The garlic and mushrooms should then be added to the pan and cooked for 1–2 minutes. A splash of the reserved pasta water should be poured in, allowing the mushrooms to cook until tender. The mixture should then be seasoned with chilli oil, salt, black pepper and zero-calorie sweetener. Meanwhile, the low-fat paneer should be blended with water until completely smooth. The flame should be reduced to the lowest setting before the paneer sauce is poured into the pan and mixed well.
The cooked spaghetti should then be added and tossed until evenly coated with the sauce. More reserved pasta water can be added if needed to achieve the desired consistency. Finally, the spaghetti should be topped with cheese, garnished with fresh basil leaves, and served hot.
