Vegetarians can sometimes struggle to meet their daily protein requirements, particularly when meals rely heavily on grains, vegetables and other lower-protein foods. Since protein is essential for muscle repair, tissue maintenance, hormone production and overall health, including adequate protein-rich foods across meals can help support a balanced diet. For those looking to meet their protein goals without compromising on taste, Mumbai fitness coach Vanshika Khurana has shared an easy and healthy vegetarian omelette recipe in her latest Instagram post. Packed with 40 g protein and 9 g fibre, the hearty breakfast option combines protein-rich ingredients with vegetables for a filling and nutritious start to the day.

Cheesy vegetarian omelette: Ingredients required

30 g besan

100 g high-protein paneer


¾ cup of roughly chopped spinach

6–7 chopped mushrooms

2-3 cherry tomatoes

½ cheese slice

Salt to taste

½ tsp red chilli flakes

½ tsp mixed herbs

¼ tsp black pepper

2- 3 oil sprays

Cheesy vegetarian omelette: How to make

To prepare the cheesy vegetarian omelette, first, the besan, salt, black pepper, red chilli flakes and mixed herbs should be whisked together in a bowl with enough water to form a smooth, pourable batter that is slightly thinner than dosa batter.

Next, a non-stick pan should be heated, and the chopped mushrooms should be added without oil. They should be cooked for 2–3 minutes until they release their moisture and turn lightly golden. The spinach and cherry tomatoes should then be added, seasoned with a pinch of salt and pepper, and sautéed for another 1–2 minutes. Once done, the vegetables should be removed from the pan and set aside.

The pan should then be lightly sprayed with oil before the besan batter is poured in and spread into a large omelette. It should not be spread too thin, as this could make it crispy. Once the omelette is halfway cooked, the high-protein paneer should be evenly grated over it and gently pressed down with a spatula.

Once the omelette is fully cooked, the sautéed vegetables should be placed over one half, followed by the cheese slice. The omelette should then be covered with a lid and cooked on low heat for about 2 minutes, or until the cheese melts. Finally, it should be folded, drizzled with favourite hot sauce and served hot.
