BLOODY VEGGIE STEW WITH RICE BY GROVER ZAMPA VINEYARDS

Ingredients:

For the stew:
Onion (chopped) : 1

Beetroots (peeled and chopped into medium-sized pieces): 5
Garlic cloves (minced): 2
Carrots (peeled and chopped into medium-sized pieces): 3
Medium mushrooms (chopped): 5
Bay leaves: 2
Spring thymes (powdered thyme can be used too): 2
Tomato paste: 2 tablespoons
Red wine: 1 and a half cup

Water: 1 and a half cup
Extra virgin olive oil
Freshly ground black pepper
Salt

For the rice:
Basmati rice (cooked) - 10 ounces (approximately 280 gms)
Freshly chopped parsley
Parmesan cheese

Method:
- Pour extra virgin olive oil on a sauce pan and heat it on a medium flame
- Once the oil is heated, add bay leaves as this will add flavour to your dish
- Add garlic and onion, and sauté them until the onion turns soft and pink
- Add potatoes, French beans, beetroot and carrot, and add vegetable stock. Let is simmer for 20 minutes
- Now add tomato paste, red wine, and water (as much as you need). If you want a thick stew, add less water. Simmer it on medium flame for about 30 minutes till the vegetables are cooked
- Serve the stew with freshly cooked basmati rice, and garnish it with parsley and parmesan cheese
- Bloody veggie stew with rice is ready

SPICED PUMPKIN MULE BY EVONNE EADIE, DIAGEO RESERVE BRAND AMBASSADOR – WEST

Ingredients:

For spiced pumpkin syrup
Pumpkin puree: 1/2 cup
Water: 1/2 cup
Brown sugar: 1/2 cup
Cinnamon powder: 1/4 teaspoon
Nutmeg: 1/4 teaspoon
Star anise: 2
Clove: 1

For the spiced pumpkin mule
Vodka: 45ml
Ginger Juice: 20ml
Spiced Pumpkin Syrup: 20ml
Fresh Lime Juice: 10ml
Soda Water: 100ml

Method:

For the spiced pumpkin syrup
- Whisk together all ingredients in a saucepan
- Simmer for 5 minutes
- Strain through a fine mesh strainer
- Refrigerate and use within 4 days

For the spiced pumpkin mule
- Combine vodka, ginger juice, pumpkin puree and lime in a shaker
- Shake for 10 seconds
- Strain into an ice-filled mug
- Top with soda water
- Garnish with a cinnamon stick and fresh herbs
- Spiced Pumpkin Mule is ready to serve

Method
