ET Awards 2018: Feta rolls, Kerala stew gave India Inc honchos some food for thought

They’re known for their voracious appetites for success. So, when it comes to serving some of the country’s most sought-after entrepreneurs and businesspersons, you need a menu that can command attention. And that’s exactly what was rolled out at The ET Awards for Corporate Excellence 2018.

The evening, celebrating the architects of change, started with a high tea that included sweet and savoury delights. On the menu were mini-croissants with sharp rucola and Philadelphia cream cheese, smokey roasted peppers served on multigrain bread, bite-sized zucchini and crumbled feta rolls and water chestnuts and asparagus in tostada shells.

The high tea also included traditional favourites with a modern twist — ginger and honey crisps, pesto swirls, orange and chocolate marbled tea cakes and decadent Nutella mini pies. Served with freshly brewed tea, coffee and infusions, the scrumptious spread set the tone for the rest of the evening.

After great speeches by the winners, interesting discussions and, of course, innumerable conversations, the guests mingled with each other, as platters of baked baby potatoes with peri peri, mini dahi kebabs, spiced guacamole shells and tandoori malai broccoli florets made the rounds. Served alongside were refreshing beverages such as mandarin orange and basil granite, chilled kokum sherbet with rose essence and a vibrant raspberry and red currant frappe.

Guests were then invited to a buffet dinner that incorporated ingredients that celebrated India and the world. The menu boasted of Indian, Thai and Italian salads with options such as the classic caprese salad with basil jus and chives, chilled melon served with crumbled feta and an Indian-style carrot and raisin salad tempered with curry leaves and mustard.

There was also an interactive counter that served up hot parathas with a chili glaze and Kerala stew served with freshly made kal dosa.

For the main course, guests tucked into saffron scented paneer pasanda, Hyderabadi bhagara baingan, Kashmiri lotus stem as well as mildlyspiced Punjabi kadhi and ghee-infused Zaffrani pulao.

And finally, dessert was served. Decadent platters filled with dark chocolate feuillant, cider cake with caramel and choux pastry filled with blueberry preserve lined the tables. A selection of ice-cream in flavours such as raspberry cheesecake, tiramisu, honey nut crunch and Mississippi mud pie was also served.

For those who preferred local flavours, there were warm baked mini gulab jamuns with a rabdi glaze, mango angoori rasmalai with a delicate pistachio dust on top as well as seasonal fruit to make sure the evening ended on a sweet note.
