Brighten up your Dussehra with crispy banana fritters and sweet-tangy 'aloo bukhara' chutney

Banana Fritters and Aloo Bukhara chutney is one such combination that goes hand in hand, and also adds charm to your festivities.

This is not only a great munchie, but doesn't take too long to be made. Just gather your ingredients, and get started.


Here the delicious recipe by Chef Shyam Gupta, Taj Mahal, New Delhi.

BANANA FRITTERS, ALOO BUKHARA

Ingredients:

For Banana Fritters:
Raw banana: 1
Chickpeas flour: 2 tbsp
Maida (all-purpose flour): 2 tbsp
Red chili powder: 1 tsp
Rice flour: 2 tbsp
Chaat masala powder: 1/4 tsp
Oil for deep frying: 2 litres

A pinch of asafoetida
Salt to taste

For Aloo Bukhara Chutney:
Plum/Aloo Bukhara: 7

Raw Mango: 1
Grated Ginger: 1.5 tbsp
Sugar: 1/2 cup
Chili flakes: 1.5 tsp
Salt to taste

For Chutney Tadka:
Cooking Oil: 1 tbsp
Cumin: 1 tsp
Cloves: 2
Raisins: 2 tbsp

Method:

For Banana Fritters:
- Heat oil for deep frying
- Meanwhile, remove the skin of the bananas and cut them into thin slices
- In a bowl, mix gram flour, rice flour, Maida, salt, asafoetida and red chili powder along with water to make a batter of thin consistency
- When the oil is hot, dip each banana slice into the batter and drop it gently into the oil
- Fry till the fritters turn golden brown
- Sprinkle chat masala powder and give a good mix
- Serve crispy raw banana fritters hot with tomato ketchup

For Aloo Bukhara Chutney
- Wash and chop plums into small pieces
- Peel and chop raw mango into small pieces
- Heat oil in a pan and add cumin seeds
- When cumin seeds start to crackle then add cloves and ginger and give this a stir
- Add chopped plums, raw mango, sugar, chili flakes, 2 tbsp. water and salt
- Mix well and cover the pan with a lid and cook on low heat
- When fruit pieces become soft, slightly mash it with the ladle and add the raisins
- Simmer till it reach the desired consistency. (It will thicken further till it cools down)
- Let it cool down completely then store in a glass jar and keep refrigerated after 2-3 days
