Laal Maas, a fiery red-meat curry, finds its origin in Rajputana traditions.
It's the season of good food and fun-filled evenings spent with loved ones. Whether you're marking the end of the nine-day fasting period of Navratri, or continuing the Durga Puja festivities by digging into delicacies, a delectable serving of Laal Maaswill add to any celebration.
The fiery red-meat curry, that finds its origin in Rajputana traditions, is best had with bajra rotis.
Here's an easy recipe of the delicacy to your Dussehra celebrations.
Garlic paste: 2 tbsp Garlic (chopped): 2 tbsp Onions (chopped): 1 cup Salt: As per taste Turmeric powder: 1 tbsp Chili powder: 2 tsp Curd: 1/2 cup Bay leaf: 3

Black pepper: 1/2 tsp Cloves: 5 Green cardamom: 3 Cardamom masala: 2

Method - Chop the mutton into half-inch chunks - Marinate it in curd, turmeric powder, chili powder, salt and garlic paste - Heat oil and ghee in a handi. Then add whole garam masala - Add chopped garlic; cook till it turns golden brown. Then add he chopped onions - After onions turn half-brown, add chili paste - Add the marinated meat and sauté on slow flame for 10 mins - Pour hot water. Cook till mutton gets tender( approx. 45 mins) - Adjust the seasoning and garnish with red chili - Serve hot
