STRAWBERRY CHEESECAKE
Ingredients:
For the cheesecake mix: Philadelphia cream cheese - 560 gm Castor sugar - 120 gm Sour Cream - 60 gm

For the crust: Castor sugar - 20 gms Melted butter - 40 gms Graham cracker biscuits - 80 gms

Method:

- To prepare the crust, in a bowl, combine the melted butter with caster sugar and crushed Graham Cracker biscuits - Transfer this into a tin and press firmly onto the base of the tin - Bake for about 10 mins and then set it aside to cool down - For the filling, soften the cream cheese in a large bowl. To this, add the eggs, casteor sugar and sour cream - Beat with a wooden spoon until everything is very well mixed - Pour the filling onto the crust and bake it at 180°C for about 30 mins - Allow the cheesecake to cool down completely - Place the sliced strawberries neatly on the cheesecake and brush with melted jam or compote - Serve

For the raspberry filling: Raspberry puree - 100 gm Corn starch - 4 gm
For the crunch: White chocolate - 25 gm hazelnut praline - 50 gm Pailleté Feuilletine - 50 gm
Steps to follow: Step 1: Stir 80g egg yolk and 4 eggs in kitchenaid mixer until you maintain foam texture. Dissolve gelatine leaves in cold water. Melt white chocolate with bain-marie technique. Step 2: Boil milk, and add it on the dissolved gelatine and mix it with white chocolate. Step 3: Stir 1400 ml cream in the kitchenaid. Step 4: Mix 2, 3 and 4 slowly. Add the ganache and slowly stir with the whisk.
Method: - Boil the cream for the ganache and add bitter chocolate - Stir with a whisk until the chocolate melts - Remove it from the oven and let the mixture cool
For the raspberry filling - Boil raspberry puree and add corn starch to give the texture - It can be used as filling after it cools off
For the crunch: - Melt the white chocolate with bain-marie technique and mix it with other ingredients - Fill half of the silicon mould with manjeri mousse - Add the raspberry filling and crunch, and fill it up with manjeri again - Freeze it in -18 degree Celsius
For the lower part of the dessert: - Put sponge cake and fill it up with manjeri mousse until the half - Put the crunch in the middle and finally add manjeri mousse again - Freeze it in -18 degree Celsius - Decorate the top part with red glaze

How to mix it: - Add water, honey, sriracha, and sliced ginger pieces to a small saucepan - Bring to a low simmer and stir to combine - Let simmer for 10 minutes, stirring occasionally - Add Jameson and lemon juice and simmer for an additional 3 minutes - Pour into mugs and add a lemon slice - Garnish with a thin ginger slice
