Breakfast can feel like an exhausting job when you are rushing to work but don’t want to eat boring meals. Many of us reach out for sugary options like cereals, pancakes and biscuits with tea. But these foods often lack essential nutrients. Fret not, as Mumbai nutritionist Vanshika Khurana has the perfect solution. In her latest Instagram entry, Vanshika has shared an easy recipe for a savoury yoghurt bowl, packed with 45g of protein and 17g of fibre that offers nourishment to kickstart your day.

Yoghurt bowl recipe: Ingredients required

  • 180g Skyr/Greek yoghurt
  • 100g cooked chickpeas
  • 1/2 slice cheese (optional)
  • 2 slices of double protein bread
  • 1/2 cucumber
  • 1/2 tomato
  • 2 tbsp of onion
  • A handful of microgreens
  • Peri-peri seasoning
  • Lemon juice
  • 1 tsp peanut butter (optional)
  • 2 crushed garlic cloves
  • Salt and black pepper
  • Fresh coriander
  • A little oil
  • 1/2 tsp chilli oil

Yoghurt bowl recipe: How to make

The first step in making the yoghurt bowl is to heat some oil in a pan. Next, sauté the cooked chickpeas with peri-peri seasoning for about 4–5 minutes. They must turn crispy and slightly brownish in colour. After that, add a half cheese slice with a small splash of water. You have to sauté for another minute before turning off the flame.

In the following step, mix the Greek yoghurt with a squeeze of lemon juice and the crushed garlic cloves, along with a sprinkle of salt and black pepper. Pour in some chilli oil before adding the peanut butter and blend all ingredients uniformly.

Then, finely chop the cucumber, tomato and onion, before tossing them with lemon juice, salt, black pepper and fresh coriander to prepare the salsa. In the final step, toast the bread until golden and crisp.

Vanshika Khurana assembled the bowl by transferring the seasoned skyr into a bowl and topping it with crispy chickpeas, a handful of microgreens and fresh salsa. Finally, she served the yoghurt bowl with the toasted bread. The nutritionist recommended adding any spicy sauce of your choice.
