The ingredients required to prepare the almond chikki are as follows: ½ cup almonds, ½ cup roasted chana, ¼ cup pumpkin seeds, ¼ cup flax seeds, ¼ cup black sesame seeds, 1/4 cup jaggery, 1 tbsp ghee, 1-2 tbsp chilli oil as per taste and salt to taste.Almond chikki: How to prepare
To prepare the almond chikki, first, the almonds, chana, pumpkin seeds, flax seeds, and black sesame seeds are gently roasted until they turn lightly golden, crisp, and aromatic. Once the mixture achieves the desired toastiness, it is set aside. In the same pan, a tablespoon of ghee is combined with jaggery and cooked over a low flame for approximately two minutes until the jaggery completely melts into a smooth consistency.Next, a splash of chilli oil along with a pinch of salt is added to the melted jaggery, and the mixture is given a quick, thorough stir. Immediately following this step, all the previously roasted nuts and seeds are folded into the pan, ensuring every ingredient gets evenly coated with the sweet and spicy glaze.
The entire mixture is then swiftly transferred onto a plate lined with baking paper and spread out evenly before the warm jaggery begins to cool down and clump together. Finally, after the chikki cools down completely, it is broken into bite-sized clusters and stored in an airtight container to preserve its crunch.
It is important to note that once the jaggery melts, one must work very quickly while keeping the flame low throughout the entire cooking process. Additionally, because this delicious treat is relatively high in calories, it should be consumed in moderation, ideally limited to a maximum of two to three clusters per day.
