Ingredients For Masala Appe
1 cup semolina¾ cup curd
1 tsp salt, or according to taste
15 peppercorns
2 tbsp oil
2 dry red chillies
1 tsp mustard seeds
2 tsp chana dal
1 tsp urad dal
2 tsp chopped ginger
2 chopped green chillies
A sprig of curry leaves
½ cup grated carrot
½ cup chopped onion
A handful of chopped coriander
1 tsp baking powder
Oil for greasing
A few cheese cubes, optional
Step 1: Prepare The Appe Batter
Take semolina, curd, salt and water in a bowl. Mix everything well to prepare a smooth batter. Let it rest for about 10 to 15 minutes, allowing the semolina to soften.
Step 2: Prepare The Tempering
Heat two tablespoons of oil in a pan. Add the peppercorns and dry red chillies, then sauté them briefly. Next, add hing, mustard seeds, cumin, chana dal and urad dal. Allow the mixture to crackle and cook until the dals turn lightly golden.
Step 3: Add Vegetables And Spices
Add chopped ginger, green chillies and curry leaves to the batter. Now add the grated carrot and chopped onion, and coriander. Mix all of these. Add baking powder just before you are ready to cook the appes. Gently mix it into the batter.
Step 4: Cook The Masala Appes
Heat an appe pan and lightly grease or spray oil into each cavity. Pour some batter into the cavities and place a small cheese cube in the centre if you want a cheesy filling.
Cover the cheese with a little more batter and cook the appes over medium heat. Turn them occasionally so that they cook evenly and become golden and crisp on all sides.
Serve Hot With Chutney
Once the appes are cooked, serve them hot with green chutney or ketchup. The combination of vegetables, spices and optional cheese makes these small bites suitable for breakfast, evening snacks or whenever you want a quick homemade treat.
