What is that dusty blue haze?
The blueberry's blue color comes from anthocyanins, which are natural pigments. However, the bloom is another feature altogether: a wax layer that grows on the surface of its skin. The more wax there is in the berry, the more silvery blue the berry will be, but berries without much wax appear nearly black. Polashock and Rowland noted that the cultivar 'Bluecrop' has a heavy wax bloom and appears light blue, while 'Nocturne' has little wax coating and appears black. Same fruit family, different coatings.

Polashock and Rowland told ARS that this waxy layer serves two functions at once: acting as a barrier to any pathogens and preventing desiccation, the drying-out process. Once picked, the blueberry cannot take in any more water; therefore, anything that prevents loss of water will ensure that the berry stays plump for longer. Separate lab research supports the hypothesis as well. A 2022 study, 'Blueberry water loss is related to both cuticular wax composition and stem scar size,' by researcher Yifan Yan and his team in Postharvest Biology and Technology observed two commercially grown cultivars of highbush blueberries, Bluecrop and Last Call, for four weeks of cold storage. The researchers reported that, on average, 70 percent of water loss in the fruit occurs through the waxy cuticle, while the remaining 30 percent leaves through the stem scar, the tiny opening left where the berry separates from the plant. The study also found that the total wax concentration increases during storage, and specifically, one component of the wax, oleanolic acid, was associated with reduced water loss. Bluecrop had roughly 37 percent less wax content than Last Call berries at harvest time. Last Call turned out to be an especially heavy-wax cultivar in its own right, so this doesn't undercut Bluecrop's own reputation for a heavy bloom compared to low-wax, nearly black cultivars like Nocturne. Researchers have also identified the stem scar as a vulnerable area for infection, since a larger scar gives disease-causing agents more ways to enter; breeding efforts therefore focus on smaller scars and heavier wax coverage.
Why growers are breeding for better bloom
Blueberry breeding isn't just about taste or size anymore. Researchers at the Genetic Improvement for Fruits and Vegetables Laboratory, based in Beltsville, Maryland, led by Polashock and Rowland, are looking for genes for disease resistance, winter hardiness, and firmness. With such traits combined in one variety through selective breeding, farmers can save money and limit their use of chemicals. The team has noted that the U.S. blueberry crop alone has a total market value of more than $900 million, and this demand continues to grow worldwide, so a hardier, longer-lasting berry has real value from farm to fridge.

Anthocyanins that cause the dark bluish color are also strong antioxidants. In a 2020 study, 'Recent Research on the Health Benefits of Blueberries and Their Anthocyanins,' published in Advances in Nutrition, Wilhelmina Kalt and colleagues looked at a significant number of observational and clinical studies and found that moderate consumption of blueberries and anthocyanins results in a decreased chance of developing cardiovascular diseases and type 2 diabetes, as well as benefits regarding weight control and neuroprotection. The overall body of evidence pointed consistently in this positive direction, though the scientists were careful to note that more clinical research is still needed to firmly establish cause and effect. Blueberries also contain vitamin C, potassium, and flavonoids that decrease inflammation in the body.
Don't rush to wash off that bloom
Here's a kitchen tip worth remembering: that dusty coating is doing its job while berries sit in your fridge, so there's no need to wash blueberries the moment you bring them home. Rinsing them only before eating is enough. Storage guidance from the USDA recommends keeping fresh blueberries in the refrigerator to extend shelf life, and freezing them for longer storage. Frozen blueberries retain most of their nutrients, and freezing may even help to lock in some nutrients; they get a little soft when thawed, but the flavor holds up.
