In case you have been wondering why your fruit turns on you this quickly, you are not alone, and it is not just your imagination. According to a Penn State Extension fact sheet, that browning can be slowed with something most people already have on hand: vitamin C.

Why cut fruit turns into a sad brown mess so fast and the fix

When you cut open an apple, pear, peach, or banana, the flesh inside comes into contact with oxygen for the first time, and things spiral out of control practically immediately. According to a peer-reviewed study titled “Browning inhibition mechanisms by cysteine, ascorbic acid and citric acid, and identifying PPO-catechol-cysteine reaction products,” published in the Journal of Food Science and Technology, this reaction is caused by an enzyme named polyphenol oxidase, which reacts with some natural compounds in the fruit when oxygen enters, leading to the formation of brown pigments. No bacterial spoilage; it's an enzyme at work too zealously. However, no one would want to eat a plain old banana slice, even if it was "technically fine."

This part is where it can come in handy. Penn State Extension says fruit will darken within about 10 minutes after it's cut, but submerging freshly cut fruit in a solution of 1 teaspoon of pure ascorbic acid (vitamin C) per gallon of cold water will halt the darkening process. It's worth being precise about what this soak is actually for: Penn State describes it as a "holding solution," something meant to keep fruit from browning while you're still peeling, slicing, and prepping it for canning, freezing, or dehydrating, not a treatment that permanently halts browning for days afterward in an open container on the counter or in the fridge. If you don't have ascorbic acid crystals around, then you can buy and crush six 500-milligram vitamin C tablets from a local pharmacy or at any grocery or drug store. Ascorbic acid is an agent that isn't only preventing the browning; it's directly interfering with the browning. The same Journal of Food Science and Technology research on browning inhibition revealed that ascorbic acid had a measurable effect on the browning process and the activity of the enzyme causing it, as well as other compounds, such as citric acid and cysteine. In other words, vitamin C is just competing with this enzyme.

A 2017 study titled “Synergistic interaction of ascorbic acid and green tea extract in preventing the browning of fresh cut apple slices,” in the Journal of Food Processing and Preservation, tested fresh-cut Red Delicious apple slices, and determined that a combination of ascorbic acid and a small amount of green tea extract was able to preserve slices from browning for up to 14 days, compared to just 4 to 6 days with ascorbic acid alone. This isn't a "still being developed" frontier, it's a finding from nearly a decade ago that has already been established and published. It's also not yet a simple home-kitchen hack, since nailing the exact ratio matters, but it's a good reminder that using vitamin C to fight browning isn't just an old folk remedy; it's an idea food scientists have continued to refine and build on since.
