Cucumber sushi: Ingredients required
2 cucumbers80g cooked rice
80g boiled chickpeas
30g avocado
120g Skyr
1 tsp chilli oil
1 finely chopped jalapeño
Salt to taste
A pinch of sesame seeds
Sriracha sauce, as required
For the dipping sauce:
Soy sauce
A little water
Lemon juice
A little honey
Cucumber sushi: How to make
To prepare the cucumber sushi first, the cucumbers are washed thoroughly and sliced in half lengthwise. Using a small spoon, the inner flesh is carefully scooped out, creating hollow cucumber boats. The boats are then cleaned properly and kept aside for filling.Next, the cooked rice is lightly mashed until it becomes slightly sticky. It is evenly pressed into each cucumber boat, creating the first layer. In a separate bowl, boiled chickpeas, avocado, Skyr, chilli oil, chopped jalapeño and salt are combined. The ingredients are mashed together until they form a smooth, creamy mixture with a balanced spicy flavour.
The chickpea and avocado mixture is then spread evenly over the rice-filled cucumber boats. Sesame seeds are sprinkled over the top, followed by a drizzle of Sriracha for an additional spicy kick. Each cucumber half is then cut into two to three smaller pieces, making them easier to serve and eat.
For the dipping sauce, soy sauce is combined with a little water, lemon juice and honey. The cucumber sushi pieces are arranged on a plate and served alongside the prepared dipping sauce, making them a refreshing, crunchy and flavourful snack.
