Gin is a favourite when it comes to cocktails. While we've all tried the classics - read: Negroni, Tom Collins, White Lady, French 75, Gimlet - gin is the ideal spirit when it comes to experimenting with flavours.

But this week, skip the regular and give fun gin drinks a shot:

The BT Signature Serve

Ingredients
Beefeater Dry: 50 ml
Tonic water: 150 ml
Ice - cubes or hand-chipped
Wheel of lemon
Wheel of orange

Method
- Pour 1 part Beefeater Dry gin and add 3 parts premium tonic water in a gin goblet or a highball glass
- Add ice till the glass is half-full, then and add a wheel of fresh orange to complement the bitter orange notes found in Beefeater Dry
- Top up with more ice and finish with a wheel of lemon to complement the citrus botanicals in the gin, and for that fresh zing

Beefeater Dry: 40 ml
Cointreau: 20 ml

Fresh lemon juice: 20 ml
White of one fresh egg (optional)*

Garnish

Method
- Add all ingredients to a cocktail shaker, fill with ice cubes and shake hard
- Strain (to remove ice chips) into a chilled stemmed cocktail glass
- Add a twist of lemon then discard the peel. *Pasteurised egg white may be used

Ingredients
Beefeater Dry: 40 ml
Dolin de Chambery Dry Vermouth: 10 ml

Garnish
Thick rice cracker topped with mascarpone and a fine drizzle of runny honey. Lemon twist (optional)

Method
- Pour the ingredients into a mixing glass and stir together to chill and dilute to release flavours and aromas
- Strain into a chilled stemmed cocktail glass
- Garnish with lemon twist
- Serve with rice cracker with mascarpone and honey on the side on a small plate or board
