People who have a sweet tooth are often aware that satisfying their cravings comes packed with refined sugars and excess calorie intake. But traditional desserts need not be off-limits, especially if you are a workout enthusiast. Certain smart post-workout snacks balance both health and taste that you can dig in without any guilt. Recently, Mumbai nutritionist Vanshika Khuarana shared the recipe for a delicious Greek yoghurt bowl, loaded with 30 g of protein. The dessert, which can be consumed post-workout, is made with simple ingredients: Greek yoghurt, honey, blueberries and walnuts.

Greek yoghurt bowl: Ingredients required

  • 220g Greek Yogurt
  • 15 - 20 blueberries
  • 1/2 tbsp of honey
  • 2-3 chopped walnuts
  • Coconut chips (optional)
  • Lemon zest
  • Zero-calorie sweetener, to taste
  • A pinch of salt
  • A pinch of cinnamon
  • 2 tbsp of honey drizzle on top

Greek yoghurt bowl: How to make

To prepare the Greek yoghurt bowl, you have to first simmer the blueberries in a pan with a zero-calorie sweetener and lemon zest for about 7 to 8 minutes until the mixture starts thickening into a jam-like texture. Allow the blend to cool off after there is no watery liquid remaining.

After that, mix the cooled blueberry compote with yoghurt and transfer it into a muslin cloth. Make sure to tie the cloth securely before placing it under a heavy weight to drain the excess water. Leave it to drain until the yoghurt becomes thick.

In the next step, scoop the thickened blueberry yoghurt into a serving bowl using an ice cream scoop so that it gets an appealing presentation. For the topping, dry-roast the walnuts in a pan until they become crunchy.

Then, a pinch of salt and cinnamon must be sprinkled and mixed well. Ensure you switch off the heat before you pour in the honey. The whole walnuts are then stirred for around 2 minutes until they are evenly coated with honey. Spread out and leave to air-dry for 5-10 minutes until crunchy.

In the final step, crush the honey-coated walnuts and sprinkle them over the blueberry yoghurt. Add coconut chips and an additional drizzle of honey if you like, before serving the bowl chilled.
