Omelette is one of the most versatile and beloved dishes, known for its soft, fluffy texture and rich, savoury flavour. Made with beaten eggs and often filled with vegetables, cheese, or herbs, a classic omelette offers the perfect balance of creaminess and lightness. Its golden exterior and tender interior make it a comfort food favourite across cuisines. Omelettes pair wonderfully with buttered toast, fresh salads, crispy hash browns, or even spicy chutneys for added flavour. But have you ever tried an omelette made without any eggs?

For those scratching their heads trying to figure out the mystery, you would be surprised to know that tucked away in the bustling lanes of Karol Bagh in New Delhi, lies a street-side stall selling delicious omelettes minus eggs, called moonglet. Yes, KB Chaat’s omelettes are vegetarian. But there’s an interesting story behind its origin, as shared by the shop’s vendor.




Delhi’s eggless omelettes


In a video posted by the Humans of Bombay on Instagram, the street vendor revealed that the veg omeltte made with moong dal batter came into existence when, on one fateful day, he was left with ground dal while selling dahi balle. That’s when an idea struck him to make something unique with the leftover ingredients.

As per the vendor, the moong dal batter sat long enough to ferment slightly and for the air to creep in. So, instead of getting rid of it, he poured the thick batter onto a hot griddle, typically used to roast kulchas. Surprisingly, the batter rose, flipped without falling apart and looked suspiciously like an omelette.

More about Delhi’s famous chaat stall


One day, a Sardar-ji customer visited the chaat corner and asked the vendor what he was making. He replied that he was making something for himself and the people who worked there. Probably intrigued by the moonglet, the customer requested that the vendor serve it to him first. After eating the moonglet, the customer was so impressed that he urged the vendor to sell the dish at his stall every day. And that’s how KB Chaat’s omelettes became a special attraction.



The vendor revealed that the shop was established by his father in 1970. Back then, they used to sell only 3 simple items, which were fruit chaat, aloo chaat, and chakranthi. But at present, they sell around 200 vegetarian omelettes with a veggie twist, adding onions, sweet corn and capsicum. Other items found here include crispy tikkis, tangy golgappas and spicy chaats.
