Diwali celebrations feel incomplete without delicious sweets and savoury treats. Raj kachori is an all-time favourite in this list of festive snacks, especially among chaat lovers. The crispy shell, paired with tangy chutneys, creamy yoghurt and other flavourful fillings, offers a delightful explosion of textures and tastes. But the deep-fried puri, calorie-rich toppings, and sugary chutneys can make it an unhealthy indulgence. But what if you could enjoy a healthier and tastier alternative? Mumbai nutritionist Vanshika Khurana has found a solution.

Vanshika, in collaboration with Bengaluru food influencer Shreya Agarwala, shared a protein-packed recipe of raj kachori, but with a twist. It is called raj katori, due to its container-like shape. Here are all the details of the preparation.

Raj katori (4): Ingredients required

½ sweet potato, steamed

100g sprouts, boiled

3 tbsp chopped onion

Amchur powder

Raj katori: How to make

First, you have to lightly roast each papad on a pan until it cooks on each side. Next, gently press it while roasting with a cloth. Make sure to place the soft papad inside a bowl immediately. Press another smaller bowl inside to shape it into the shape of a katori. Let it cool and repeat the process with the remaining papads.

Vanshika Khurana and the Bengaluru food influencer cautions to create the shapes within 2 seconds of taking it off the pan or else they might become too crispy.

After that, mix the sweet potato and sprouts with some salt, red chilli powder, black pepper, garam masala, amchur powder, and lemon juice. Add papad crumbs to the bottom of each katori, followed by the sweet potato and sprouts filling.

Finally, top with chopped onion and tomato, green chutney, imli ki chutney, Skyr, crushed peanuts, baked sev, and pomegranate. Serve immediately and enjoy the savoury snack.
