Cookies are undoubtedly one of the beloved comfort foods. But made from flour, butter, and sugar, they can be high in calories. However, with healthy recipes taking over the internet lately, you can easily make delicious ones at home with just a few basic ingredients. Helping you in the process is celebrity nutritionist Yasmin Karachiwala, who has worked with Bollywood stars like Alia Bhatt, Katrina Kaif, and Deepika Padukone. Yasmin recently shared a healthy chocolate chip cookie recipe on Instagram that you can enjoy guilt-free.

Chocolate chip cookie: Ingredients required

To make these chocolate chip cookies, you will need 425 g of drained and rinsed chickpeas, along with ¼ cup each of peanut butter and maple syrup. The recipe also requires 1 tsp vanilla extract, 1 tsp baking powder, ¼ tsp salt, and ⅓ cup dark chocolate chips for sweetness and flavour.

Chocolate chip cookie: How to make

For the chocolate chip cookies, start by adding the drained and rinsed chickpeas to a food processor along with the peanut butter, maple syrup, vanilla extract, baking powder and salt. Process all the ingredients together until they form a smooth and thick mixture, ensuring there are no large chunks of chickpeas remaining. The mixture should have a consistent texture that can be easily scooped onto a baking tray.

Once the mixture is ready, add the dark chocolate chips and gently fold them through the batter. This helps distribute the chocolate chips evenly throughout the cookie mixture without breaking them down. Next, line a baking tray with baking paper and scoop portions of the mixture onto it. Arrange the portions with enough space between them so they do not stick together while baking.

Preheat the oven and bake the cookies at 180°C for around 15–20 minutes. Keep an eye on them towards the end of the baking time, as the edges should turn lightly golden when they are ready. Once baked, remove the tray from the oven and allow the cookies to cool for at least 10 minutes before serving. This resting time allows them to firm up and makes them easier to handle.
