For those dealing with a similar dilemma, Mumbai-based nutritionist Vanshika Khurana has a wonderful solution. Not long ago, the former JP Morgan employee dropped a video on Instagram, sharing a simple, healthy and equally tasty recipe of eggless French toast for a flavourfully unique breakfast twist, which can be your much-needed breakaway from boring morning meals.
Power-packed ingredients
According to Vanshika, this protein-rich breakfast delivers around 35 grams of protein while keeping the calorie count balanced at approximately 465, making it ideal for fitness-conscious individuals. The recipe uses double-protein bread, low-fat paneer, Greek yogurt, besan, grated cheese, spinach, onions, and Schezwan chutney for flavour. Nutrient-boosting spices like turmeric, chilli flakes, mixed herbs, salt, and pepper further enhance both taste and health benefits. Together, these ingredients create a savoury, wholesome breakfast packed with protein, fibre, and essential nutrients.
Simple method for a healthy breakfast upgrade
To begin, Vanshika recommends preparing a thick, smooth batter by combining besan, Greek yogurt, finely chopped spinach, sliced onions, turmeric, chilli flakes, herbs, and seasonings with water. Once ready, the protein bread slices should be thoroughly coated in this mixture.
Next, place the batter-covered bread on a lightly greased heated pan and cook until both sides turn golden brown and crisp. After this, crumbled low-fat paneer is added as a protein topping, allowing it to toast slightly for added texture. Grated cheese is then sprinkled over the top for extra flavour.
To ensure the cheese melts perfectly, the toast should be covered and cooked briefly for about two minutes. Finally, a drizzle of Schezwan chutney adds a spicy finishing touch, transforming the dish into a deliciously satisfying breakfast. Served hot, this easy eggless French toast offers a refreshing, nutritious alternative to repetitive healthy meals while keeping taste firmly on the menu.
