If you are a Bengali, then you must have tried the state’s beloved comfort food: the aloo sheddho-bhaat combo. This traditional home-cooked delicacy is nothing but a desi version of mashed potatoes served in fancy cafes and restaurants. The creaminess of mashed potatoes is complemented by spicy green chillies and a generous amount of pungent mustard oil. And the dish is typically paired with a plate of piping hot plain rice with a dollop of butter or ghee. Now, a digital creator from the Northeast, currently living in Mumbai, has offered a delectable Assamese twist to the traditional aloo sheddho-bhaat.

Assam’s classic alu pitika recipe

Vishal Langthasa’s recipe is known as alu pitika and it has the internet drooling. According to the food vlogger, the dish might be simple, but the comfort it gives from a single bite hits home, much like its Bengali staple.

To make aloo pitika, Vishal Langthasa first sliced the potatoes in half before boiling them in water inside a pressure cooker. Dicing the potatoes ensures that they are soft and tender, claimed the culinary expert. After that, he peeled the potatoes and mashed them uniformly until they turned smooth and lump-free. Vishal revealed that although there are many pitika recipes, he would be showing two of them.

In the following step, Vishal Langthasa drizzled some oil into a pan before adding chopped onions and dried red chillies to it. Next, he fried them until golden-brown and mixed the ingredients with the mashed potatoes kept aside. A sprinkle of salt also went into the blend. As for the second aloo pitika recipe, the food influencer simply added raw, chopped onions, diced green chillies and a little bit of mustard oil with salt. You can also use coriander leaves for garnishing, shared Vishal.

The video came to an end with Vishal Langthasa treating himself to the classic potato dish, with rice and yellow dal. And if the clip left you craving some aloo pitika, then you would be happy to know that foodies in the comment section echoed a similar sentiment. ‘Alu pitika is an emotion. Let's keep it that way,’ urged a user. ‘This is the DBC - Dal Bhat Chokha combo from Bihar,’ pointed out another. One person noted that adding butter or ghee would double the taste.
