I feel it is overrated because a chef has to do nothing in it. It is a frozen product used by most — can be bought, fried and eaten at home as well.
Underrated: Cold soups.
Not many serve it, but they are brilliant in summer as a main course as well. A beetroot borscht or a gazpacho is great, but everybody associates a soup to be hot — cold soups can be quite a brilliant meal.
Indianising foreign cuisine just to suit the taste buds of locals has to be sent packing. A lot of places do it as they are afraid people may not like what they serve.
Love: Everything to be done with smoking food — ribs, steaks, chicken, and sous vide cooking if applied to meats. It guarantees that your meat is cooked to 67.8 degrees if that is what you wish it to be at.
