Cheesy soya kebabs: Ingredients required
For kebabs
40g of soya chunks
1/2 Onion
1/2 cup corn
1.5 tbsp of rice flour
Masalas - Salt, Pepper, 1/2 tsp red chilli powder, 1/2 tsp dhaniya powder, 1/4tsp garam masala, 1/4tsp haldi, 1/2 tsp jeera
1 green chilli
2-3 garlic cloves
1tsp ghee
For bread crumbs
Grind 1 slice whole wheat bread
For chutney
Handful dhaniya
1-2 walnuts
1/2 green chilli
1 garlic clove
Salt and pepper
Cheesy soya kebabs: How to make
To prepare the delicious and protein-rich soya kebabs, begin by boiling the soya chunks until soft. Squeeze out all the excess water thoroughly, as this helps achieve the right texture. Meanwhile, heat a little ghee in a pan and sauté the garlic, green chilli and cumin seeds until aromatic. Add the chopped onion and corn, cooking them until they turn lightly golden. Sprinkle in the salt, pepper, red chilli powder, coriander powder, garam masala and turmeric, then mix everything well.
Transfer the cooked mixture to a blender along with the boiled soya chunks and rice flour. Blend until it forms a coarse, well-combined mixture. Grease your hands lightly with ghee, shape the mixture into small cutlets and place a cube of cheese in the centre of each before sealing them properly.
Next, coat each kebab evenly with breadcrumbs made from ground whole wheat bread. Pan-fry the kebabs over a medium-low flame for around 15 minutes, turning them occasionally until they become golden brown and crispy on all sides.
To prepare the accompanying chutney, blend fresh coriander leaves, Greek yoghurt, walnuts, green chilli, garlic, lemon juice, salt and pepper until smooth. Serve the crispy cheesy soya kebabs hot with the fresh chutney for a wholesome, protein-packed snack.
