Chef Sanjeev Kapoor recently on his Instagram shared a protein, fiber and flavourful frankie especially for early morning kids school tiffin. He shared a very easy soya keema frankie which can be made in a few minutes and also tastes delicious.

Ingredients
1 ½ cups soya mince, soaked in 2 cups of water
4 readymade chapatis

2 tbsps oil
1 tsp cumin seeds
2 medium onions, chopped
2 green chillies, chopped
1 tbsp ginger-garlic paste
2 medium tomatoes, chopped

1 tsp red chilli powder
½ tsp turmeric powder
2 tsps coriander powder
1 tsp cumin powder
Salt to taste
2 tsps pav bhaji masala
2 tbsps chopped coriander leave and also to sprinkle
2 tbsps tomato ketchup

4 tbsps mayonnaise
4 tbsps green chutney
Cucumber crudites to serve
Hung yogurt dip to serve

Soya keema frankie recipe method
The first step is to heat oil in a shallow nonstick pan then add cumin seeds and once they start to change the colour and onions. After a few minutes add green chillies, ginger garlic paste and saute it for a minute or two.

The next step is to add tomatoes and cook for 2 to 3 minutes. After that add chilli powder, turmeric powder, coriander powder and cumin powder with salt and mix all these well. After that add half a cup of water and cook for 2 to 3 minutes on medium heat.

The next step is to drain the excess water from soya and add to the pan. Cook for 3-4 minutes on medium heat. Add pav bhaji masala, coriander and ketchup and then give it a good mix.

Then heat a nonstick tawa and warm the chapatis for 20 seconds on each side. Then spread the mayonnaise and green chutney evenly on each chapati. Then add a good amount of soya mixture on one side. Roll tightly and wrap each roll in a piece of butter paper.

The final step is to cut into halves and place in the tiffin.
