She has created a simple brownie recipe that replaces traditional flour and butter with steamed cauliflower, resulting in a healthier dessert that still maintains a rich chocolate flavour.
Explaining the idea, she said, "This recipe sounds wrong… until the first bite. I know adding cauliflower to a brownie sounds questionable. But that's the fun of trying new recipes. Dark chocolate does the magic, the cauliflower keeps it soft and moist, and maple syrup is there only if you like it a little sweeter."
Ingredients
According to Yasmin Karachiwala, you will need:1 small cauliflower
1 cup 70% dark chocolate chips
1 tablespoon maple syrup (optional)
Method
- Steam 1 small cauliflower until it becomes soft and fully cooked
- While still hot, transfer it into a blender
- Add 1 cup 70% dark chocolate chips
- Add maple syrup (optional) if extra sweetness is desired
- Blend everything until the mixture becomes smooth and creamy
- Line a tray or container with parchment paper
- Pour the blended mixture and spread it evenly
- Freeze for 30–40 minutes
- Cut into brownie squares and serve chilled
