Bajre ki raab, made using pearl millet flour, jaggery, ghee and spices, has long been consumed in Rajasthan as a cooling beverage during hot weather. Ingredients:
- 4 tbsp bajra (pearl millet) flour
- 1 tbsp jaggery (grated or powdered)
- 2 tsp ghee
- 1 tsp ajwain seeds
- ½ tsp salt
- 1 tsp ginger powder
- 2 cups water
- Optional: chopped nuts (almonds, cashews)
Method:
- Grind bajra (pearl millet) finely in a grinder (do not make it too powdery).
- Heat ghee in a pan and add ajwain seeds; let them splutter.
- Add bajra flour and roast in ghee for 2–3 minutes.
- Add jaggery, salt, ginger powder and water. Mix well to avoid lumps.
- Bring to a boil, then cook on low heat for about 5 minutes.
- Serve warm or allow it to cool. Garnish with chopped nuts if desired.
- The raab thickens as it cools. If reheating, add a little water and simmer before serving.
FSSAI’s campaign is part of its broader “Eat Right India” initiative, which encourages the adoption of healthier, traditional food choices rooted in local wisdom.
