For this recipe, you will need spaghetti, fresh garlic, extra virgin olive oil, red chilli flakes, salt and freshly ground black pepper. You can also add fresh parsley and a little grated Parmesan for extra flavour, although these are optional. Start by bringing a large pot of salted water to the boil and cook the spaghetti according to the instructions on the packet until al dente. Before draining, reserve about half a cup of the pasta water. This starchy water can help bring the sauce together and give the pasta a smoother texture.

While the pasta is cooking, heat the olive oil in a large pan over low to medium heat. Add thinly sliced garlic and cook gently until it becomes lightly golden and fragrant. Add the chilli flakes and stir for a few seconds. Be careful not to burn the garlic, as it can quickly turn bitter.
