While manufactured air fragrances mostly tend to cover up the odor, these chemicals react with the airborne particles, thus modifying our perception of odors.


How do aroma compounds interact with air?

Rosemary is useful not only because of its fragrance but also due to its chemical composition. The phenolic compounds present in rosemary include rosmarinic acid, which may affect the oxidation process leading to foul smell. They react with volatile compounds and lower the amount of aldehydes and other sources of odor.
