Science says flamingos don’t start out pink: Here’s how their food changes the color of their feathers

This helps explain why scientists do not simply describe flamingos as becoming pink because they eat “pink shrimp.” The important factor is the carotenoid chemistry moving through the food web and the bird’s metabolism.
Canthaxanthin is particularly important. Biochemists classify it as a red-orange xanthophyll carotenoid, and research has identified it as one of the pigments associated with flamingo feathers.
Flamingo Feathers Store The Pigments

One of the clearest clues is that baby flamingos are not born bright pink. Flamingo chicks begin life covered in pale gray or whitish-gray down. Their characteristic coloration develops as they grow and consume pigment-containing food.
