US state dinner during PM Modi's visit: All veg and millets to boot

First Lady Jill Biden has gone all veg in honor of the chief guest and invited a special chef to design a meatless feast with many nods to Indian flavours.

WASHINGTON JUNE 21: Everything matters for the official state visit of Prime Minister Narendra Modi. First Lady Jill Biden has gone all veg in honor of the chief guest and invited a special chef to design a meatless feast with many nods to Indian flavours.

How about saffron-infused risotto followed by rose and cardamom flavoured strawberry shortcake with hand-crafted sugar twists in the colors of the Indian and US flags on the side? Heard of “compressed watermelon” and marinated millet with a tangy avocado sauce? Well, that’s the first course followed by risotto and stuffed portobello mushrooms.

There will be an option of fish – sea bass – on request for those who simply can’t imagine a meal without meat of some sort. Will President Joe Biden go for sea bass or mushrooms? The First Lady declined to predict. At the private dinner on Wednesday night, the Bidens served Modi pasta. Safe and sound.


The meal at the state dinner will be accompanied by “Patel red blend 2019” – who knew the Patels had diversified into unknown territory? There will be a Chardonnay and a sparkling wine for those who favour white over red.

Each table will have different flower arrangements to convey a feeling that the table was set just for them - as if they were coming to the actual Biden home, not a mass-produced dinner by a catering service. Each table will be unique in décor too. Silks will drape the background.

“Our relationship isn’t only about governments. We’re celebrating the families and friendships that span the globe — those who feel the bonds of home in both of our countries,” the First Lady said in a preview of the feast. ET was part of a group of journalists for a behind-the-scene look at the months-long preparations that have gone into planning and executing the grand dinner.

Mrs. Biden let mere mortals actually taste little bites in a surprising gesture – journalists usually stand at a distance and just look at the dishes — but about 400 guests will experience the real deal Thursday night to celebrate the India-US partnership.

The dinner will be outdoors in a pavilion on the South Lawn draped in green and saffron – for the Indian flag – while the peacock and the bald eagle will serve as the “backdrop” to President Joe Biden and Modi when they toast each other. The lotus will bloom throughout in the décor and on tables in a bow to traditional Indian art and mandala-style illustrations.

Guest can gaze at the Washington Monument and the Jefferson Memorial as they sip their Patel red. When they walk out, the ground will be lit with hundreds of candles. As for the guest list, it is just about the most closely guarded secret in Washington. Some say that all five Indian American members of Congress are invited along with CEOs such as Sundar Pichai, Vivek Lall among others. Priyanka Chopra may be on the list but who knows.
