Peel And Dice The Beetroot
Wash two medium beetroots well. Peel the skin and dice them into small, even cubes, roughly half a centimetre in size. Smaller pieces cook faster and more evenly. Beetroot stains easily, so using a cutting board you don't mind colouring is a good idea. Gloves help too if you want clean hands after.

Add the diced beetroot to a pan with two tablespoons of water. Cover and cook on medium heat for 8 to 10 minutes until just tender. Do not overcook or it turns mushy. Beetroot is rich in dietary fibre (2g per 100g), folate, and betalain pigments, making it genuinely one of the more nutritious vegetables you can cook with, according to a review in Food Science and Nutrition.

In a separate pan, heat two teaspoons of oil. Add half a teaspoon of mustard seeds and wait for them to splutter. Then add dried red chillies, a pinch of asafoetida, and a few fresh curry leaves. This tempering, called tadka or thalippu, is the flavour base that defines South Indian cooking and takes under two minutes to prepare.

Add the cooked beetroot into the tempering pan. Mix well so every piece is coated. Add salt to taste, half a teaspoon of cumin powder, and a pinch of turmeric. Stir on medium heat for two to three minutes. Research published on PubMed found beetroot consumption was associated with a meaningful reduction in systolic blood pressure, making this a dish worth eating regularly.

Turn the heat off and add two tablespoons of freshly grated coconut. Toss everything together. The coconut adds a natural sweetness and texture that balances the earthy beetroot beautifully. Serve hot alongside steamed rice and dal, or as a side with roti. It also works well as a light standalone bowl with some yoghurt on the side.
