Sweet potato brownie: How to make

To prepare the sweet potato brownie, first, the sweet potato is steamed for 20-25 minutes until extremely soft. It is then mashed until smooth. Meanwhile, the dates are soaked in hot water until soft, drained and blended into a thick paste.

The mashed sweet potato and date paste are combined with nut butter. Protein powder, cocoa powder, oat flour, baking powder, vanilla and salt are then added and mixed well. Milk is gradually added until the mixture forms a thick, fudgy batter that drops from the spatula but does not pour like cake batter. The sweetness can be adjusted with a zero-calorie sweetener, if desired.

Some chocolate chips are folded into the batter before it is transferred to a lined dish. The remaining chocolate chips and optional walnuts are sprinkled on top. The air fryer is preheated to 160°C for five minutes, and the brownie is air-fried for 18-20 minutes. It is cooled completely before being cut into eight squares.
