November brings with it a slight nip in the air, reasons to bring out those soft sweaters and say goodbye to iced drinks.

And since weekends are just perfect to sip on warm soup and binge-watch your favourite show, we've got you your new winter weekend recipe.

White Onion And Apricot Soup

Makes: 1 portion

Ingredients
White onion: 150 gm
Unsalted butter: 50 gm

Thyme: 5 gm
Fresh apricot: 50 gm
Cherry tomato: 30 gm
Herb oil: 5 ml
Pearl onion: 15 gm
White wine vinegar: 5 ml
Red wine vinegar: 50 ml
Parmigiano reggiano: 50 gm

Parsley: 5 gm
Sea salt: 10 gm
Sugar: 10 gm

Method

- Peel and wash white onion, cut into thin slices.
- Cook the onion on slow flame with unsalted butter and thyme. Add salt and sugar.
- Once the onion is soft and translucent, let the mixture cool down by giving it an ice bath.
- Make a fine puree of soup mixture and strain it.
- Mix the grated parmigiano reggiano and parsley.
- Form a parmesan bark using a teflon coated pan. Mould the mixture like a cinnamon bark using the round and cylindrical handle ladle.
- Finish the soup with sea salt, sugar and a touch of white wine vinegar.
- Garnish with parmesan bark, grilled apricot, confit tomatoes and pearl onion.
- Drizzle herb oil.
