The masterchefs at Hyatt Regency, Gurgaon paired this semi-hard, unripened brined cheese made from a mixture of goat's and sheep's milk, with apricots for the most delectable dish.

Grilled apricot, smoked halloumi
Balsamic cream, brioche crisp, mesclun salad, herb oil


Ingredients

Halloumi cheese: 125 gm
Fresh apricot: 100 gm
Basil leaves: 100 gm
Brioche loaf: 50 gm
Clarified butter: 5 gm
Arugula leaves: 10 ml
Extra virgin olive oil: 15 ml

Mix lettuce: 5 gm
Balsamic cream: 5 gm
Basil pesto: 50 gm

Method

- Slice halloumi cheese in to 1.5'' thickness
- Smoke them with charcoal, thyme and butter
- Slice fresh and peeled apricot and char grill
- Marinate smoked halloumi with extra virgin olive oil, shredded basil, sea salt and crushed pepper
- For making brioche crisp, make a thin slice of brioche crisp, cut into long triangle
- Soak slice of brioche in clarified butter; place this slice on cutter in to half sphere
- Cook this brioche crisp on 100*c for 18 minutes,

Plating

- Squeeze balsamic and basil pesto on plate,
- Place smoked halloumi and chargrilled apricot in layers and place brioche crisp on top of it
- Drizzle extra virgin olive oil and add some mixed lettuce on top
