Large fast-food chains use carefully controlled fountain systems to keep drinks consistent. These can involve filtered water, chilled syrup and water, calibrated syrup-to-water ratios and temperature-controlled equipment. Those details matter because a fountain drink isn't delivered ready-made. Water and concentrated syrup travel through the dispensing system before being mixed and poured into a customer's cup. The US Food and Drug Administration's Food Code specifically addresses beverage dispensing equipment. It says components including beverage nozzles and syrup dispensing lines or tubes should be cleaned at the frequency specified by the manufacturer. Where no such instructions exist, they should be cleaned often enough to prevent “accumulation of soil or mold”. So while the anonymous post's specific assertion about tanks being sanitised every time they become empty isn't established by the FDA guidance, the broader importance of regular cleaning certainly is.Researchers have found microbes in fountain drinks
There is also scientific evidence behind concerns over poorly maintained dispensing systems. A study published in the International Journal of Food Microbiology examined 90 drinks collected from 30 soda fountains in Virginia. Researchers detected coliform bacteria in 48% of the beverages tested, while 20% had heterotrophic plate counts above 500 colony-forming units per millilitre. The researchers noted that plastic dispensing lines can provide conditions where microbial biofilms develop.A follow-up study produced another striking finding. After examining fountain beverages over a longer period, researchers reported microbes in more than 70% of beverages sampled in both study years. They also found that managers' self-reported disinfecting schedules did not correlate with the amount of microbial contamination detected. These studies were limited geographically and do not establish that all or even most American restaurant fountain machines are contaminated.
The hidden machinery behind your drink
For customers, a fountain drink appears remarkably simple: place a cup beneath a nozzle and press a button. Behind that button, however, is a network of water, syrup, tubing and dispensing equipment that requires proper upkeep. The anonymous worker's dramatic allegation remains just that an allegation. But the science points to a less sensational takeaway: regardless of how good a restaurant's beverage system is, its cleanliness ultimately depends on appropriate maintenance.
