Cakes, puddings and cookies are the key elements of every Christmas feast. This year, bake some peppermint bark chocolate cookies to add a crunchy twist to your celebrations.

Peppermint Bark Chocolate Cookies

Ingredients:

All-purpose flour: 2 cups
Unsweetened cocoa powder: 1 cup

Baking soda: 1/2 tsp
Baking powder: 1/2 tsp
Salt: 1/4 tsp
Unsalted, softened butter: 1 cup
Brown sugar: 3/4 cup
White granulated sugar: 3/4 cup

Egg: 1
Vanilla extract: 1 tsp
Store-bought peppermint bark pieces: 1 cup

Method:
- Preheat the oven to 350°F
- Line a baking sheet with parchment paper
- Sift together the flour, baking soda, baking powder, salt, and cocoa powder in a bowl and set aside

- Make the cookie dough: Beat the butter and sugars together for about 2 minutes with an electric mixer at medium speed, until completely mixed and light in colour
- Add the egg and the vanilla extract until well mixed, about a minute
- Be sure to scrape down the sides and the bottom of the bowl halfway through
- With the mixer on medium speed, add the sifted flour mixture to the bowl slowly

- Stop once all of the flour is incorporated (do not over-mix)
- Fold in the peppermint bark chips using a stiff spatula
- Scoop out the dough
- Take small spoonful of the dough and roll between your hands to make 1-inch sized balls
- Arrange on the baking sheet, spaced a few inches apart
- Bake for 10 to 12 minutes
- Let cool on the pan for a few minutes, then transfer to a wire rack to cool completely

Ingredients:
Eggs: 6
Sugar: 3 kg
Lemon juice and zest: 25 ml
Ground Almonds: 0.3 kg
Carrots - grated and squeezed: 0.3 kg
Corn flour: 0.025 kg
Baking powder: 0.1 kg
Kirsch: 0.3 l
Ginger candied: 0.2 kg
Cinnamon: 0.005 kg
Apricot glaze: 0.5 kg

Egg white: 0.3 kg
Icing sugar: 0.3 kg
Lemon juice: 0.1 l

Marzipan carrots
Marzipan: 0.3 kg

Method:
- Grate carrots and squeeze
- Sieve flour, corn flour and baking powder together
- Whisk sugar and eggs till its light and fluffy
- Fold in flour mixture and rest all ingredient
- Put it in the greased mould and bake at 170C for 40 minutes or till done
- Make royal icing by whisking egg whites & adding sugar gradually, add lemon juice
- Once the cake is done cool it on wire rack
- Pour the royal icing and wait for it to set on the cake
- Decorate with marzipan carrots
