Recipe: A gluten-free chocolate cake that will make you forget everything else
The next time you want something yummy, yet gluten-free, you know what to whip up.

So we asked Chef Santhanam, the pastry chef at Radisson Blu Atria in Bengaluru to share his secrets for the perfect gluten-free dessert. And trust us, once you've tried this, you won't want to settle for anything else.
Gluten-free chocolate cake
Almond base:
Ingredients
Butter (soft): 100 gm
Icing sugar: 75 gm
Vanilla essence: 5 ml
Almond essence: 5 ml
Method
- Cream together butter and icing sugar. And add the essences.
- Fold them with almond flour
- Transfer the batter into a mould, and make a thin layer.
- Bake in pre-heated oven at 180 c for 10 minutes
- Take it out from the oven and let it cool.
Cake:
Ingredients
Whole Eggs: 2
Egg yolks: 5
Dark chocolate: 250 gm
Butter (soft): 40 gm
Method
- Mix eggs with sugar.
- Melt butter with chocolate
- Mix both the mixtures together and pour it in into a pre-baked almond base.
- Pour water in a baking tray and place the almond base in. Bake in pre-heated oven at 170c for 30-35 minutes.
- Take it out and keep it in the chiller for 2 hours.
