SMOOR HOT CROSS BUNS
Ingredients: 200g Raisins 900g Flour

100g Orange zest 15g Spices (Cinnamon, Star Anise & Allspice) 50g Butter unsalted 50g Sugar 250g Milk 25g Yeast 5g Salt SMOOR Easter Hot Cross Buns

Method: - Dissolve yeast in luke warm milk - Add 800g sieved flour with sugar, spices, salt and orange zest - Mix in a slow speed for 5 minutes

- Add the raisins - Add the melted butter slowly and mix it in high speed for 7 minutes to prepare a smooth dough - Measure a round ball of dough for each bun – measure at 40 grams each on a kitchen scale and set aside for proofing - Mix the balance 100g flour with enough water to get a thick paste for piping consistency - Pipe the mix in a piping bag and make a cross on top of the bun - Bake it at 200 deg C for 25 minutes

Ingredients: Fresh coriander: 8-10 spring Fresh kiwi: 1 no Litchi juice: 120 ml Garnish kiwi slice Glass pilsner Castle Delight Method: - One fresh Kiwi fruit muddled with lots of coriander, then shaken with ice and litchi juice - Single strain serves in a glass pilsner with kiwi slice for garnish
