Mint & Orange Caipiroska

Ingredients
Half a Malta orange (cut into
wedges), 8-10 mint leaves, 15ml
lime juice, 2tsp brown sugar

Method
- In a rock glass gently muddle malta orange wedges (just enough to release the juices and not the bitter oil from the peels), along with fresh mint leaves, lime juice and brown sugar.

- Add cracked/crushed ice
- Stir very gently
- Garnish with half a slice of malta orage and sprig of mint.

Ingredients
50g hung curd, 8-10 mint leaves,
12ml cream, 10g fried garlic, 10g
fried onions, 80g pulled chicken,

1 loaf multigrain bread, 50g baby
potatoes, 30g lettuce, salt and pepper
to taste

Method
- In a bowl combine hung curd, chopped mint, cream, salt and white pepper.
- Mix the ingredients together and then add pulled chicken.
- Cut the bread from the centre
- Apply butter and roast in an oven for 2 minutes at 180 degrees.
-Place lettuce in the bread. Before filling the mixture in the bread, mix fried garlic and fried onion.
- Spread the mixture on the bread and garnish the mixture with remaining fried garlic or fried onion.
- Serve sandwich with herb roasted baby potatoes and lettuce salad
