Pickett, who runs four restaurants in Melbourne says that while things get hectic in the kitchen, he has a sure-fire way to keep stress at bay. Pickett says, "I make it a point to do a little bit of meditation these days along with regular exercise to keep me going through the stress and high pressure that the kitchen puts me through." What's one meal that every man should be able to make? "Smashed avocado," says Pickett. "It's perfect for a good, simple and healthy breakfast or even as a side with your lunch or dinner.
But you definitely need to get the seasoning right with salt, pepper, lime juice and some good local olive oil.".
