Motichoor laddoos: How to make

To prepare the motichoor laddoos, first, you have to use a non-stick pan. Roast the dailya in 1 tsp ghee for 4–5 minutes, stirring occasionally. Next, add water to the pan and cover it with a lid. Let the mixture cook on a low flame for 5–10 minutes, or until the dailya becomes soft and mushy. Make sure you do not let it become too dry. The mixture should remain wet and mushy so that it can be easily shaped into laddoos.

Once the dailya is cooked, add the rice flour, cardamom powder, saffron-infused water, sweetener, food colour and raisins. Add 1 tbsp of ghee at this stage as well. Sauté the mixture for about 2 minutes, then turn off the flame and allow it to cool.

The mixture should have a sticky consistency with a slightly starchy texture. Once it has cooled enough to handle, apply a little ghee to your palms and start rolling the mixture into laddoos. Garnish the finished laddoos with pistachios or cashews and serve.
