A vegan omelette recipe shared by a fitness coach on Instagram has no eggs or meat
Love omelettes, yet baulk at the idea of going non-veg? Taking to Instagram, Mumbai-based fitness coach Vanshika Khurana shared a new, completely delectable omlette recipe which has no trace of eggs or meat. The omelette is also a great breakfast choice for those watching their weight, as it has 9 grams of fibre, 40 grams of protein and just 390 calories.

The recipe uses besan, also known as gram flour, as the foundation instead of eggs. It is combined with high-protein paneer, spinach, mushrooms, cherry tomatoes and a small amount of cheese. The seasoning comes from salt, red chilli flakes, mixed herbs and black pepper, while only a few sprays of cooking oil are required.

Ingredients

For the batter, use 30 grams of besan, along with salt according to preference, half a teaspoon each of red chilli flakes and mixed herbs, and one-quarter teaspoon of black pepper. Add enough water to achieve a smooth batter with a consistency slightly thinner than regular dosa batter.


The filling requires 100 grams of high-protein paneer, around three-quarters of a cup of roughly chopped spinach, six to seven chopped mushrooms and two to three cherry tomatoes. Half a cheese slice is added toward the end. Two to three sprays of oil are sufficient for cooking.

Preparation Method

Begin by placing the gram flour in a mixing bowl. Add the salt, pepper, chilli flakes and mixed herbs. Gradually pour in water while whisking continuously until a lump-free, fluid batter is formed.

Next, warm a non-stick pan and place the mushrooms directly into it without adding oil. Allow them to cook for approximately two to three minutes. As they heat, they will release moisture and gradually develop a lightly browned appearance.

Add the chopped spinach and cherry tomatoes to the pan. Season the vegetables with a little salt and pepper, then cook them for another one to two minutes. Once softened, transfer the vegetable mixture to a plate.

Lightly coat the same pan with a few sprays of oil. Pour the prepared besan mixture into the centre and spread it carefully into a broad, omelette-like shape. Avoid making it excessively thin, as that can result in a crispier texture rather than a soft omelette.

When the batter has cooked roughly halfway through, grate the high-protein paneer evenly across its surface. Use a spatula to gently press the paneer into the omelette so that it stays in place.

Once the base is properly cooked, arrange the sautéed vegetables over one side. Place the cheese slice on top, cover the pan and allow everything to cook over low heat for about two minutes. This gives the cheese enough time to melt while allowing the remaining ingredients to heat through.

Finally, fold the omelette over itself and serve it immediately. A drizzle of hot sauce can be added for extra flavour.

Khurana has previously spoken about making a major professional shift, leaving her well-paid position at JP Morgan to pursue fitness content creation on a full-time basis. She told the Hindustan Times that her decision was driven by a desire to establish herself as a knowledgeable voice in the fitness space rather than simply continue along a conventional corporate career path.

She has also highlighted the greater control that her new profession gives her over her schedule. Her working hours can vary considerably from day to day, allowing her to make personal plans during weekdays and compensate by working on weekends when necessary.

The career transition has also reportedly proved financially rewarding. During some months, her income from fitness-related work has reached nearly twice what she previously earned from her corporate position, demonstrating how successfully she has turned her passion for fitness into a profession.
