Crispy wholewheat nachos and tangy salsa
To craft the base, Vanshika begins by taking one wholewheat tortilla or a large chapati and cutting it into neat triangular shapes. She then lightly sprays the pieces with oil and seasons them with a pinch of salt and black pepper. Next, these seasoned chips are air-fried at 160°C for eight to ten minutes—with a quick check and flip midway—or baked in a preheated oven at 180°C for the same duration. After letting them rest for 5 minutes, the nachos achieve a perfectly crispy texture. For the accompanying salsa, Vanshika places half a chopped onion, one fresh tomato, and a dash of lemon juice into a hand chopper. She then adds a splash of tomato ketchup, salt, and pepper before grinding everything together into a smooth, tangy mixture.
Protein-packed cheesy dip and fresh guacamole
The star of this nutrient-dense snack is a velvety cheesy dip. Vanshika blends 100 grams of low-fat paneer, 60 grams of rich Greek yoghurt, a few soaked dried red chillies, and salt until the texture turns completely smooth and creamy. Placing this mixture in the refrigerator for 10 minutes allows it to set perfectly. To elevate the platter further, an optional guacamole can be whipped up in minutes, claimed Vanshika. She simply mashes half a ripe avocado and combines it with finely chopped tomatoes, onions, and fresh coriander leaves. A final toss of lemon juice, salt, pepper, and mixed herbs ties all the refreshing Mexican flavours together effortlessly. And voila! Your nachos bowl is ready to be assembled and enjoyed.
