When The Olive opened in Mumbai, it attracted CEOs, celebrities and even royalty. But on one occasion, the staff at the restaurant were the actual royalty. AD Singh, founder of Olive, recalled, "When Prince Charles visited India, we were asked to cater lunch for him in the heartlands of Punjab. We set up a beautiful lunch with about 50 bottles of champagne. It was in a hangar, turned into a makeshift garden in the middle of nowhere. But, Prince Charles came in, had a quick bite of croissant and then rushed off to his next appointment." This left the staff with 50 bottles of untouched bubbly.

Singh said, "We couldn’t even bring it back. That night, the staff literally had a bath with champagne." Cheers to that.
