Living on peanuts thanks to taxes? Here's a 'Mungphali' salad recipe for some post-Budget distraction

Foxed by all the tax announcements? Here's some food for thought in that case ...

When taxes leave you only with peanuts, save a few and use the rest in a salad.

Methi & Mungphali salad

Ingredients
Baby methi: 10 gm
Baby rocket: 80 gm
Salted chopped peanuts: 3 tbps

Sesame seeds: 1 tbsp
Fine minced shallot: 1 tbsp

Honey chilli vinaigrette
Lime juice: 1 cup
Honey: 8 tbsp
Chilli oil: 1.5 cups

Method
- In a bowl combine lime juice, honey and salt
- Drizzle in the oil while whisking to form an emulsion.

Chilli oil
Oil: 100 ml
Madras Chillis (long, unwrinkled): 10 gm

Andhra chillis (stout, round): 10 gm

Method
- Blend the dried chillies with one third of the oil.
- Pour into a container when completely blended and then pour over the rest of the oil and allow to steep for 12 hours.

Preparation
- In a bowl combine the dressing, mix well.
- Add the salad ingredients and mix gently. Make sure not to over mix.
- Once done, top up with more salted peanuts for garnish.
