Halloween Meat Loaf With Chorizo And Goat Cheese Risotto
Makes: 10 portions
For meat loaf:
Minced lamb: 750 gm
Eggs: 2
Onion: 150 gm
Milk: 1 cup
Bread crumbs: 100 gm
Brown sugar: 25 gm
Mustard Dijon: 35 gm
Salt: To taste
Pepper: To taste
Ingredients
Risotto rice: 350 gm
White wine: 100 ml
Chorizo (chopped): 100 gm
Basil: 10 gm
Goat cheese: 120 gm
Onions: 50 gm
Butter: 175 gm
Parmesan cheese: 150 gm
Lemon zest: 1
Salt: To taste
Pepper: To taste
Method
- In a large bowl, combine the minced lamb, eggs, onions, milk and bread crumbs.
- Season with salt and pepper and place in a lightly greased loaf pan.
- In a separate small bowl, combine brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
- Bake at 175°C for 1 hour.
For risotto:
Method
- In a medium saucepan, melt butter in olive oil. Add the onion and cook over low heat.
- Add the rice and cook over moderate heat, for about 1 minute. Add the wine and simmer until it almost evaporates.
- Add 1 cup of the simmering stock and cook, stirring constantly, until absorbed.
- Continue to add the stock, 1 cup at a time until the risotto is done.
- Remove the risotto from the heat and stir in the basil, goat cheese, parmesan and lemon zest.
- Season the risotto with salt and pepper and serve with meat loaf.
Spiced Pumpkin And Bacon Muffins
Makes: 10 portions
Ingredients
Roasted pumpkins: 450 gm
Milk: 1/2 cup
2 large eggs
Bacon (cooked): 150 gm
Fresh bread crumb: 1 cup
Parmesan cheese: 80 gm
Refined flour: 1/4 cup
Ground nutmeg: 1/2 teaspoon
Ground cinnamon: 1/2 teaspoon
Ground ginger: 1/2 teaspoon
Sugar: 1 tsp
Salt: To taste
Butter softened: 2 tsp
Method
- In a bowl, combine pumpkin, milk and egg with a fork.
- Combine all the dry ingredients in a separate bowl and mix with wet ingredients.
- Mix well to combine and spoon the mixture in to greased muffin cups.
- Sprinkle chopped bacon over muffin and bake at 180°c for 15-20 minutes
- Bake at 400° for 15 minutes or until golden brown. Serve warm.
