The festival of lights is here, and what better way to celebrate than with a feast with the family. With many people opting to say no to store-bought sweets, you can leave a mark with these delicious homemade desserts.

Ingredients Cashew nuts: 2 1/4 cups Sugar: 1 cup Water: 100 ml Milk or dark chocolate: 1 cup

Method - Grind the cashew nuts in a blender to make a fine powder - Take a heavy bottomed pan, add sugar and water to it. Place on medium heat and bring to boil. - Turn the heat down after sugar dissolves and allow the mixture to boil for a few minutes till it reaches a one-string consistency - To test consistency, transfer a few drops of the syrup on a clean plate, allow it to cool for 15-20 seconds and check if ir forms a single thread between your thumb and index finger - Add the ground cashew nut powder to the syrup and stir continuously for 4-5 minutes, while on heat - It will gradually turn into a thick paste

- Take the mixture off the heat and allow it to cool to room temperature - After it cools down, grease palms with a dash of ghee and knead it to form smooth, uniform dough - Next spread a sheet of butter paper on the counter top, place the dough on it and roll the dough out with a rolling pin to a thickness of 5-6 mm, evenly - Take water in a saucepan and put on heat. Place a heatproof bowl over it and melt the dark chocolate

- Pour the melted chocolate over the rolled kaju katli dough and spread it evenly with the help of a spatula - Allow it to cool for some time and then refrigerate for 15-20 mins - After the chocolate has set, cut it into diamond-shaped pieced

Method - Combine khoya, flour and cardamom powder to form a dough; keep aside - Break a small portion of the dough to form round shapes; stuff with gulkhand (Make sure there are no cracks on dough balls) - Heat ghee (clarified butter) on medium heat and fry dough balls on low flame stirring continuously - Remove when they turn golden brown - Put them into warm sugar syrup - Cover the lid and rest for 2 hours - Serve hot

- Combine sugar and water in a pan and simmer till the mixture has a 1-string consistency - Remove from the heat and keep warm
For ghevar
- Combine flour, arrowroot and melted ghee in a bowl - Add 1 cup of water while whisking continuously - Add 2 more cups of water again in a thin stream while whisking continuously - Keep the batter in a cool place away from the heat - Place the ghevar ring in a pan (kadhai) and pour melted ghee in it till it reaches 3/4th height of the mould - Heat ghee on a medium flame and pour a spoonful of the batter into the mould in a thin stream (it should settle in the mould) - Repeat seven times making a hole in the centre of the ghevar using a wooden skewer stick - Pour batter into this centre each time - Once cooked take out and immerse in sugar syrup, drain quickly and place on a serving plate - Arrange multiple layers with different sizes and serve
