Ranveer Brar, the chef and TV host, is known for his unique approach to food. Asked which country he finds most inspiring these days, he says, “The Nordic states are the most fun.” He likes Sweden and Denmark because he feels there is a lot happening there. “They are doing so much in terms of different methods of cooking, fermentation or ice curing. So that’s my latest fascination.”

The chef also loves to explore South Africa. Brar says, “South African cuisine is always underrated and unexplored. The cuisines of Ethiopia, Kenya a l so h ave some outstanding dishes.” And what ab out a c u i si ne that’s overrated? Brar laughs and says, “Well, being a Punjabi, it is very hard to say this, but Punjabi food is very overrated. People believe that it is the only Indian cuisine. In terms of a dish, the Tunde Kebab is overrated. I am from Lucknow, and I say that because I know that there are better kebabs out there.”
