Regular eggs can sometimes feel repetitive, especially when you are looking for a quick meal that is both satisfying and packed with flavour. That is when foodies start searching for creative twists and safe experiments so that they can transform a simple ingredient into a rich and comforting dish. Recently, digital creator and food influencer Rachana Kumar shared a video on Instagram demonstrating how to make cheesy mozzarella eggs, which she deemed perfect for breakfast, brunch, or even a light dinner.

Mozzarella eggs: Ingredients required


2 half-boiled eggs
1 tbsp of olive oil or butter

1 tsp of finely chopped garlic
1 tbsp of chopped spring onion greens
1–2 slit green chilies
1 tsp of chili crisp oil
1 small, thinly sliced onion,
1 cup of sliced, mixed red and green bell peppers,

3 tbsp of fresh cream
A handful of mozzarella cheese
1/2 tsp of salt, as per taste
1/2 tsp of black pepper powder
1/2 tsp of chilli flakes
1/4 tsp of cumin powder
1/4 tsp of oregano for topping

Mozzarella eggs: How to make


To prepare the dish, Rachana Kumar begins by heating olive oil or butter in a pan. Once the fat is warm, she adds finely chopped garlic, spring onion greens, and slit green chillies, allowing the ingredients to sauté briefly until aromatic. A spoonful of chilli crisp oil is then stirred in, followed by sliced onions, which are cooked for a few seconds to soften slightly.

Next, the red and green bell peppers are added and tossed well with the aromatics. The vegetables are cooked for just a couple of minutes, helping them retain their crunch and vibrant colour. Meanwhile, the half-boiled eggs are peeled and sliced before being carefully arranged in the centre of the pan atop the vegetable mixture.

Fresh cream is then poured over the ingredients, while a generous handful of mozzarella cheese is sprinkled evenly across the surface. The dish is seasoned with salt, black pepper, chilli flakes, and cumin powder, creating a balance of creamy, spicy, and savoury flavours.


The pan is then covered and left to cook on low heat for about 8 to 10 minutes, allowing the cheese to melt into a bubbling, golden layer. Before serving, Radhika Kumar finishes the dish with a light sprinkling of oregano, resulting in a comforting one-pan meal that is rich, cheesy, and packed with flavour.
