Restobars give bar menu an icy makeover with boozy popsicles, liquor-infused ice-creams.
BENGALURU: A chilled beer is probably the only drink Bengalureans grab to beat the heat this summer – except, it’s not. Restobars across are giving their bar menu an icy makeover with boozy popsicles and liquor-infused ice-creams. These desserts have made their way to menus this summer and are selling like, well, hot cakes, industry experts, say. Moreover, they are also lighter on the pocket than a regular cocktail.
Nevermind Bar and Social in Indiranagar introduced six popsicles last week as part of a special summer menu. “We launched it with our brunch menu, and we were sold out within hours,” says general manager Sonalika Pawar. Their popular ones include a rum-based Mango Mojito, a coconut, cucumber and gin treat and a classic Bloody Mary popsicle – all served with a punch. The boozy treats are frozen overnight in popsicle moulds and use a standard 30 ml of alcohol, Pawar said.
Foxtrot in Koramangala introduced infused popsicles a while ago, after their popularity at Mamagoto. The restaurant offers blueberry, honey and milk, litchi and orange-flavoured popsicles, all with a kick of Vodka. It uses a 60ml serving of alcohol for them. Sly Granny, too, has its own take on this popular trend – but with a twist. Instead of infusing alcohol in the popsicles, it serves a regular blueberry sorbet popsicle in a glass of sparkling wine. “Slowly, the popsicle melts into the wine, giving it a great fruity flavour. It’s a very popular item on the menu and does well on weekends,” Varun Periera, executive chef, said.
It’s not just popsicles, the humble ice cream is also getting a kick. Food blogger Monica Manchanda is all praise for the trend. The techieturned-food writer and baker says her watermelon margarita popsicle and Baileys kulfi are very popular and make for a perfect treat for adults. “The best part is that you don’t have to slave over a dessert during a party – just make these popsicles ahead of time,” she said.
It’s not just popsicles, the humble ice cream is also getting a kick. Among the plethora of new places coming up at Sarjapur Road is Aurum, opened just last month. Finding pride of place on its menu from next week will be two infused desserts – a stout beer and orange ice-cream and a Baileys Irish Cream and Nutella ice cream.
Its co-founder Dinesh Arora said: “Sarjapur is a competitive market with a lot of young IT crowd. So, it’s very important to constantly innovate. Given how hot it’s been, this seems to be the perfect time to introduce these boozy ice-creams.” The icecreams, however, will have a light flavour of the alcohol so that it can be enjoyed as a fun dessert, not a drink substitute. “The idea is to give customers a taste of unique flavours, not get tipsy on dessert,” he said. Based on the response to these new additions, he plans to introduce boozy cakes and brownies as well.
